Our business and characteristics
Since our foundation, we have been manufacturing Echigo Miso. Since the Taisho era (that is, since around 1912), we have been producing miso-preserved vegetables.

The brewing technology we have cultivated is designed to ferment the ingredients to let them bring out their flavor.

Overview of main products and technologies
[What are kohaku zuke (amber pickles)?] 
These pickles are homegrown vegetables matured for more than two months to finish them in an amber color. Long matured in our long-standing sweet and spicy miso sauce, the pickles will make you feel -- throughout the inside of your mouth -- the miso sauce from inside the vegetables when you chew them. If you want to accompany your rice with something, these amber pickles are recommended. The vegetables used are daikon, eggplant, and cucumber.

[What are ogon zuke (golden pickles)?]
These pickles are homegrown vegetables preserved in a sweet miso sauce for two weeks to finish them in a golden color. Since they are pickled for a rather short period, they give an exquisite taste and texture. Reduced in salt content, they are easy to eat and can be consumed as a side dish. Not only as a side dish to accompany your rice, they can be a good match as a spice as well. The vegetables come in various kinds: daikon, eggplant, cucumber, and ginger.
