Joppari Oyaji black garlic

Our black garlic contains a high amount of nutrients that are difficult to obtain through a diet. They can be easily obtained by peeling the garlic. The odor component allicin also changes into a different component and disappears, so you can enjoy the garlic every day without caring about the smell.

Garlic for use as a raw material is grown in our own farms. Our 45 years of experience in cultivation allows us to grow large heads of garlic with a high sugar content. We dry the harvested garlic for about a month. This drying is the most important process, and we take great care to control the temperature. The garlic is over-dried if the temperature is even slightly too high or mold may develop if it is too low, and it cannot be shipped in either case. The garlic is stored in a dedicated refrigerator after the drying process. This refrigerator also has a secret mechanism to maintain freshness, and this allows us to offer fresh products throughout the year. Only the portion to be processed into black garlic is polished, and undergoes the process for manufacturing black garlic. This manufacturing process includes a maturing process in which temperature control is again important. The garlic may become too sour, bitter, or less nutritious if it is matured at incorrect temperatures. Our management processes from production to processing differ from those of other companies, so there will differences in the taste and components.
